The 31st July is National Avocado Day, so here are three tasty avocado recipes for you to try.
AVOCADO & STRAWBERRY MILKSHAKE
You don’t have to be accurate with your measurements. It will still taste delicious.
2 medium avocados
Approx 150g/1/2lb strawberries
Approx 200ml/1/2pint milk
Honey, to taste (1/2 tblsps)
Scoop of ice cream
Cut the avocado in half and gently remove the stone. Scoop the flesh out of the avocado, using a teaspoon.
Place all the ingredients in the liquidiser and blitz.
Pour into glasses.
GUACAMOLE
There are many versions of this Mexican dip. It’s also a tasty salad ingredient.
This is my version.
2 medium avocados with the flesh scooped out
1 large soft tomato, chopped
1 small red onion, chopped
1 garlic clove, chopped finely
lime juice
Olive oil
Seasoning
Squash the avocado to a paste using a fork.
Mix all the ingredients together and chill in the fridge until needed.
SPAGHETTI WITH AVOCADO SAUCE
1 large avocado, flesh scooped out & mixed to a paste with a fork
2 garlic cloves, mashed finely
Olive oil
1 tblsp lemon juice
Large handful grated Parmesan
Large handful grated Cheddar, or cheese of your choice
2 finely chopped tomatoes
Splash of sweet chilli sauce or a sprinkling of Chilli flakes
Seasoning
Pasta water to mix
Spaghetti for two
Cook the spaghetti.
Blend all the other ingredients in a food processor, then cook slowly in a saucepan until the onion’s soft, adding some of the cooked spaghetti water to thin it down.
Serve the spaghetti with the avocado sauce over it.
Grate Parmesan on the top.
