Enjoying Oma’s bread.
In the 1990s our children’s friend, Nico, would help his German grandmother in her bakery every morning before he went to school.
He gave us Oma’s recipe.
Over the years, I have used this recipe to make both loaves and rolls,
These days I make more rolls because they do not need so much gas to cook, and, as we all know, the cost of power keeps going up !!!!
The other day we ran out of white bread, and couldn’t be bothered to go out to the shop as it was the usual November blistering heat here in Durban.
Hence the searching for the recipe and a happy afternoon of bread making.
I have used all sorts of flours and sugars and yeasts over the years, but this is the original ingredient list.
My only warning is that it doesn’t last long !!
I saved some of the dough to make Eastpeasy Pizzas – see next article.

Nico’s Easy Bread.
Ingredients
4 cups flour
I extra cup flour
2 flat tablespoons or 14g dried yeast
2 teaspoons sugar
1 teaspoon salt
2 cups warm to hot water
1/4 cup cooking oil 
Preparations
Method
Mix together
4 cups flour, yeast, sugar and salt
Add water and oil and mix – this will be sticky
Use the extra cup of flour to add bit by bit until no longer sticky.
Knead for about 5 minutes, using more flour if necessary until elastic and smooth.
Put back into the bowl and cover with a damp cloth.
Leave to rise for about half an hour until twice the size.

To make rolls …..
Spray and flour two baking trays.
Cut dough into 12 pieces.
Knead each piece into a round roll size and place 6 on each tray. 
On baking trays
Allow to rise again until double size.
Bake in 400F / 200C oven for about 15 minutes.
If they sound hollow when tapped with a knuckle on the bottom, they are done.
They are delicious when straight out of the oven with butter, as you can see from this photo !!!!

Foot note – To make two loaves …….
Divide into two, roll and put into oiled loaf pans.
Leave to rise to the rims of the pans.
Bake in 400F / 200C oven about 40 minutes.
If you want soft crusts, wrap in a tea towel to ‘sweat’ and soften the crusts.
