Cauliflower Greens; Cook them, Don’t Waste Them!

By Lyn Funnell

Cauliflower greens

See this photo? It’s the greenery from four cauliflowers. It fills a whole large saucepan.

Most people would cut them off and bin them. But they’re perfectly edible greens!

I washed them and cut them into small pieces. Then I boiled them in water until they were soft.

Cooked greens

Some of the stalks stay slightly crunchy.

After draining them, I liquidised some of them until smooth, then I added an onion, cut up , a packet of Passata, (tomato) and seasoning.

I liquidised it again until smooth. Then I tipped it into a baking dish and baked it for half an hour.

The rest will be used in a stirfry.

Two meals from food that will normally be thrown away!

The Koreans use everything with no waste.

They must be horrified at the things that end up in the bin in this country!

I used the rest of the greens in a delicious stirfry.

I boiled them for a bit longer.

Then pour some oil in a frying pan.

Add a chopped onion & cook slowly until soft.

Add chopped mushrooms if you like.

Add the greens fry until heated. Then add chopped garlic, seasoning & a dash of soy sauce.

Serve with cooked rice & meat if you want to.

Such a Waste of Food!
