Blue Cheese and Banana Sandwich

I recently discovered this sandwich filling.

It seems to be a post-war favourite, probably when bananas re-appeared after the war.

Give it a try. It doesn’t sound very appetising. But the balance of the sweetness of the banana combined with the flavour of the blue cheese go together perfectly.

Ingredients per person

2 slices of buttered bread

1 banana, slightly soft

Blue cheese to cover the banana

I used the High Weald Dairy Brighton Blue.

It’s got a tasty blue flavour without being overpowering.

Slice the banana as thinly as possible to cover 1 slice of bread.

Cover it with thinly sliced blue cheese.

Place the 2nd slice of bread on top and pat it down firmly to keep all the filling inside.

Slice in two.
