Redcurrant Syrup and Smoothie Recipe

 There is nothing more satisfying than harvesting fruit from your own garden and making something with it. It is a feeling I know many of us share. This Summer I have been given many jars of home made goodies, and treated to freshly dug potatoes with lashings of butter and homegrown mint.

The redcurrant bushes in the berry cover were beckoning, so I carefully picked them.

Jam or syrup ? Syrup won this time, and it is delicious as a cordial and in the smoothie below!!

 

REDCURRANT SYRUP

Harvest

Pick red currants.

Take away all the excess greenery and put them in to a saucepan with enough water to just cover.

Bring to the boil and simmer very low for 20 minutes or until soft.

Strain and push through a seive.

Seived and sugar added

Put the liquid back in the saucepan with the same weight of sugar – in this case 3 tablespoons.

Stir in sugar, bring to the boil whilst stirring and then leave to cool.

Put in a container and store in the fridge.

Syrup is now ready for use as a cordial or to add to summer deserts.

 

REDCURRANT SMOOTHIE

Redcurrant smoothie ingredients

6 teaspoons redcurrant syrup

3 large tablespoons real coconut yogurt

I banana

2 apples

2 large dates

Chop fruit finely.

Blend.

Enjoy outside with the bees and the dandelions.
