Cheesy Bread Omelette. 2 Dishes using the Same Ingredients.

I discovered an Italian recipe called Polpette di Pane some time ago and I’ve made it quite a lot.

Here’s the recipe.

Ingredients

120g (approx.) stale bread

70g (approx.) grated cheese

I used High Weald Dairy  Sussex St Giles

2 eggs

Parsley

1 clove garlic

Pepper, not salt as the cheese is salty enough

Oil

Soak the bread in water until soft.

Drain and blitz with the other ingredients except the oil.

Heat oil in a pan.

Drop tblsps of the mixture into the oil. Turn until brown all over.

Drain on kitchen roll.

Eat with your fingers.

 

When I’d blitzed it I realised that it looked like omelette batter.

But would it work?

Yes, it certainly did!

Heat some oil until hot in a frying pan.

Tip in the batter and spread it out.

Let it cook for about 8 minutes until brown underneath.

Using a spatula, slide it onto a plate.

Quickly tip the plate up over the pan.

Let it cook again until brown and slightly crispy, making sure the inside is cooked.

Slide onto a plate again and cut into slices.

I served it with a mixed salad.

We had half each.

It was a great success!
