Here comes the Pepper Train!

By Lyn Funnell

Make this delightful Pepper Train when you have visitors for tea and wait for their comments!

Ingredients

3 peppers of any colour

12 carrot rings

12 cucumber rings

6 cocktail sticks, cut in half

Fillings of your choice.

Cut the top off the peppers, about 1/3 of the way down.

Scoop out the seeds, etc.

Fix the wheels at the corners with the cocktail sticks.

Fill the peppers with ingredients of your choice.

I used carrot batons, baby plum tomatoes and the chopped top parts of the peppers.

You could use small bread sticks, olives, chopped cheese, chopped pickled onions, or anything else you fancy.

Serve on a plate, pushed close together like a train.
